What are grains? Grains are small, hard, dry seeds. There are many different grains such as barley, oats and quinoa. Corn, rice and wheat account for most of the world’s grain harvest. Rice and most wheat are consumed directly as food, corn is largely used for livestock and poultry feed. Almost half of the world’s grain is produced in just 3 countries, China, the US, and India.

Historically one of the pillars of nutrition and one of the worst victims of the modern culinary world, grains are a fascinating food group. While in the past they were solely responsible for the survival of many peoples, these days there are so many other, possibly better ways to reach your daily caloric intake. And while breads, pastas and pastries aren't leaving dinner table anytime soon, I think we all recognize that eating too much of them is not only detrimental but also concerningly easy.
The question becomes, if this the fault of the grains themselves or the ways they've been twisted into the products we see on the shelves.

In this video I discuss what are grains, what are whole grains, the difference between whole grains and refined grains, some of the health benefits of whole grains, and some popular foods that are made with grains.

Grains
What are grains? Grains are small, hard, dry seeds. There are many different grains such as barley, oats and quinoa. Corn, rice and wheat account for most of the world’s grain harvest. Rice and most wheat are consumed directly as food, corn is largely used for livestock and poultry feed. Almost half of the world’s grain is produced in just 3 countries, China, the US, and India.
Grains can be divided into 2 subcategories, whole grains and refined grains. Whole grains contain the entire grain kernel, which includes the bran, the endosperm, and the germ. Refined grains refers to grain products that have been modified from their natural composition, this usually involves the removal of the bran and germ.
The nutritional difference between whole grains and refined grains is dramatic. The bran is typically high in fiber, protein and b vitamins. The germ is also high in protein, fiber and b vitamins, and it contains healthy polyunsaturated fats.
While refined grains are stripped of the bran and germ, they are usually enriched with some of the nutrients that have been lost. But, the nutrients that are replaced are no where near the original amount, and many times the body doesn’t use or process these nutrients the way it does when the food item is in its original form.
Consumption of whole grains has been linked with a decrease in risk of cardiovascular disease. In some people, it has lowered triglyceride levels, and has shown an inverse relationship to hypertension and obesity, when compared to refined grain consumption. Whole grains also lower spikes in blood sugar and because of their high fiber content can aide in digestion.
Some foods made from grains include bread, pasta, oatmeal, breakfast cereals and tortillas. Grains are an essential part of any balanced diet, so, make sure the grains you are consuming are whole grains.

Let’s talk about so-called “healthy whole grains.” Eating whole grains is a widespread diet recommendation, but for what reason?
Whole wheat bread, for example, is made from whole wheat flour, not refined flour. But, neither type of flour has much fiber, vitamins, phytonutrients, minerals, or protein. Whole grains also contain phytic acid, which blocks the absorption of minerals.
The majority of studies on grains compare whole grains to refined grains. Many people already know whole grains are healthier than refined grains. So, why aren’t we comparing the effects of consuming whole grains vs. not consuming whole grains or refined grains?
Aren't whole grains heart-healthy? The Cochrane group evaluated nine random-controlled trials and came to the conclusion that there isn’t enough evidence to say that consuming whole grains will reduce your risk of heart disease.
However, foods without grains are beneficial for your heart, liver, arteries, and blood sugar levels. Learn more about these foods in my other videos.

Historically one of the pillars of nutrition and one of the worst victims of the modern culinary world, grains are a fascinating food group. While in the past they were solely responsible for the survival of many peoples, these days there are so many other, possibly better ways to reach your daily caloric intake. And while breads, pastas and pastries aren't leaving dinner table anytime soon, I think we all recognize that eating too much of them is not only detrimental but also concerningly easy.
The question becomes, if this the fault of the grains themselves or the ways they've been twisted into the products we see on the shelves.
What I Would Change:
It dawned on me long after the release of this video that I have an entire C Tier that I didn't use. And I would move some options down and around to better show the complexity of the different grains. So maybe one day I'll do another deep dive into this, just not today.
