San Diego’s Tacos El Cabron Debuts Birria and Corn in a Cup Near UNLV

A new home for Tijuana-inspired dishes, tacos, and al pastor opens on Maryland Parkway

Built with a hard-to-miss modern exterior and a large, Broadway light bulb sign, San Diego’s Tacos El Cabron has debuted the first of two Las Vegas expansions, now serving a Tijuana-inspired menu close to UNLV.

Replacing a 2,520-square-foot Stir Krazy Mongolian Grill at Maryland Parkway’s College Town Shopping Center, the counter-service, industrial-style interior offers seating at the stand-alone bar, facing the open grill, and in the open-plan dining area.

A fast-casual fixture in San Diego’s downtown Gaslamp District since 2017, the Las Vegas location grills its meat on an open flame and features a full menu of tacos, quesatacos, and burritos filled with ingredients including octopus, al pastor, adobada, shrimp, and carne asada. Diners can also sample Mexican street corn prepared as elotes, or esquites, served in a cup, plus surf and turf bowls with rice and black beans, churros for dessert, and the house special birria, promoting the spicy beef stew to a stand-alone dish.

Paperwork has already been filed for second, larger restaurant on the westside, taking over 4,712 square feet at the intersection of Decatur Boulevard and Meadows Lane. Tentative plans for an outdoor Strip concept moving into Resorts World Las Vegas have yet to be confirmed.
