Eight months since San Diego’s Tacos El Cabron revealed expansion plans to Las Vegas, the wildly popular Mexican restaurant is already working on a second location with the unconfirmed possibility of a third headed to the Strip.
A popular tenant in the downtown Gaslamp District, the counter-service restaurant has been serving Tijuana-inspired dishes, street tacos, burritos, al pastor, spicy shrimp, birria, and grilled octopus for the last two years.
Yet to publicly announce any of its big local plans, Tacos El Cabron’s first restaurant at Maryland Parkway’s College Town Shopping Center is in the final stages of construction, replacing a 2,520-square-foot Stir Krazy Mongolian Grill and hoping to attract diners from the surrounding UNLV population.
Currently building a patio and featuring its own indoor bar, the restaurant has posted temporary signage promising to be coming soon.
Even before it opens, a second location is in the works for the westside, moving into another stand-alone building and filling 4,712 square feet at the intersection of Decatur Boulevard and Meadows Lane. An estimated arrival date has not been shared.
San Diego-based Jules Wilson Design Studio worked on the distinctive look of the Maryland Parkway restaurant and posted renderings of a possible third expansion, an impressive walk-up, outdoor venture at the Strip’s highly anticipated Resorts World Las Vegas. The images hint the space would be created from shipping containers, but offer no further confirmation.
