Lee was a chef from Omashu who ran Double Dumpling, a popular restaurant located in the city's market area.[2]
History[]
Winter 99 AG[]
In winter 99 AG, Lee met Avatar Aang when he visited Omashu and sold him some dumplings.[1] Lee continued to promote his dragon dumplings by his restaurant after Team Avatar left the city, claiming they could fill their customers' stomachs with the "fire of the dragon". He was quick to clarify that there was no connection to the Fire Nation at all, given the strict prohibition against Fire Nation contraband in the city. When dumplings were sold out at his restaurant, Lee would offer customers other delicacies, such as egg custard tart.[2]
A short while after the Avatar's departure, Lee agreed to join his friend Jade on a trip to Hegemon's Folly, a huge mausoleum at the tip of a peninsula located west of Omashu. Jade wanted to travel there as sales were down in her general goods store, and she hoped to find antiques to sell to customers. However, they got lost after arriving in the area. Lee told Jade that the mausoleum was soon coming up, while Jade remarked that she did not realize how wild it was in the surrounding area. At that moment, Lee and Jade encountered a group of Fire Nation soldiers and local collaborators, who suspected the pair was searching for the riches that Captain Masaru had sent them to find. Lee claimed that they were simply out on a date, but Jade awkwardly paused instead of affirming his story. This led to a soldier demanding she answer the question, and when Jade tried to explain herself, he demanded the others beat the truth out of them. However, Jiang, among the collaborators, decided to stand up for the two civilians, and took on the mercenaries and Fire Nation soldiers, managing to defeat them and save the friends from Omashu.
Having saved the pair, Jiang asked what they were really doing out at Hegemon's Folly. Lee reiterated that they were on a date, but when Jiang asked if it was true, Jade said they were just friends, and explained why they had come out to search for antiques. Jiang asked if Lee and Jade would help her crack into the mausoleum and plunder anything there for themselves, but Lee was skeptical, asking if she was afraid of spirits. Jiang declared that as captain of the Flying Wolfbat, she was not afraid of anything, which led Jade to deduce that she was an infamous pirate, much to Lee's worry. However, Jade declared that it was not a problem for them, as they were now in Jiang's debt, and looked for a way to enter the mausoleum after discovering its entrance was flooded and its door sealed.
Jiang, Lee, and Jade worked together to crack the code relating to a mechanism that would only open if the statues surrounding the mausoleum were rotated in a specific position, which reflected a riddle relating to symbolism about the life of General Wei, who was buried at the site. As they worked to solve the puzzle, Jiang and Lee spoke about her life growing up in poverty. Jiang also teased Lee, which was meant lightheartedly, although her words were sometimes taken too literally, causing Jade to stick up for him. When they were done with the arrangement, Jiang let Lee pull the lever, hoping to let him have the prestige after giving him such a hard time.
When the group managed to open the entry to the mausoleum, Lee was hesitant, claiming he had left dumplings on the boil back in Omashu. Jiang tried to egg him on with an idiom about courage, and the group climbed up the stairs together. As they reached the top, Lee tried to trade sayings with Jiang. As they heard a loud cracking sound, Lee decided to stay put. However, he was urged to go into the cave with Jiang and Jade when the pirate stated that there were pythonacondas nearby. The group all screamed when they heard the voice of someone they did not know inside the cave, and Lee believed there was a ghost present. The trio then realized that it was only Wen, an archeologist who had been trapped inside after leaning on a lever. Lee tried to look for the lever himself, but Wen quickly told the chef not to touch it.
At that moment, Captain Masaru arrived, confronting Jiang's party. However, only the pirate herself had any martial skill, with Lee providing commentary on Jiang's insults as she fought him off. Lee and Jade cheered once Masaru was defeated. After Jade remarked on seeing displays of heroism, the shopkeeper and chef talked to Wen about having seen the Avatar in Omashu. The conversation then turned to the sales at Jade's shop, but Wen said that the mausoleum unfortunately did not contain anything valuable, unless Jade only wished to convince tourists she had treasure from the ancient world. Jiang also made her departure from the group, telling them all that she had a job waiting if any of them wanted to choose a life of piracy. Lee asked if that even applied to him, and Jiang eagerly affirmed that it did, as she would have no problems attracting people if she had his dumplings on the Flying Wolfbat.
After Jiang left, Lee and Jade proceeded to look through the rest of the rubble with Wen. The archeologist pointed out just how fragile the artifacts were as they looked for relics, but Lee said he would be as careful as he was with his dumplings, which Wen very much approved of. The group also approached a smaller crypt for artifacts, but they found a platypus bear ready to attack. Lee told Jade that he was going to save her, although Wen was skeptical how the chef was going to ward off the hostile animal. Nevertheless, Lee managed to successfully defeat the platypus bear. Jade thanked her friend for saving her, causing Lee to blush deeply. They proceeded to check the crypt for treasures, and also found a valuable collection of training scrolls from General Wei.[1]
Spring 100 AG[]
Lee continued to reside in the city after it was occupied by the Fire Nation and renamed to "New Ozai". The new Fire Nation governor's daughter, Mai, frequented Lee's dumpling restaurant. Despite Mai's generally negative and pessimistic outlook on life, she became fond of Double Dumpling.
When Princess Azula was informed that the people of Omashu were planning a coup against her, she threatened the people of the market area that she would burn down various establishments if she did not receive a list of plotters, with Lee being aghast when the princess stated she would start with Double Dumpling. After Mai and Ty Lee helped her orchestrate an attack to intimidate people, but the princess' friends soon tried to persuade her to take a less aggressive approach. Mai specifically pointed out that she enjoyed Lee's dumpling place.[3]

- Lee's design is identical to another character in the game called Lee, a servant in the Avatar mansion who first appeared in The Rise of Kyoshi.
