I wash the canner in between uses but it still builds up. Any ideas on what it is and how to remove it?- other than normal washing because that’s not working.

If your water is hard, any acid solution will dissolve the calcium. I use white vinegar, a tablespoon or two in a quart or gallon - depending on how much scale has built up, how fast I want it to work, and how sloppy I am that day.

I sometimes use lemon juice but only if I have some left from something else because it costs more.

A dollop in the water while you are canning will keep most of it from forming at all.

I don't know what else it is likely to be.

Get some cleaning vinegar, pour in to about an inch, add two inches of water.
Well, that would certainly do it faster. Vinegar is quite inexpensive so it could be worth doing it that much faster. On the other hand, if you have space to let the canner set out of the way then you can do other things in the time. Either works.
