Plus, you get to pull out your slow cooker to make this meal, so the work is fairly hands off. Mojo is a Cuban sauce, generally used as a marinade. There is both green and red mojo, and red mojo, which is used for this recipe, is often used for meats. The sauce is bright, citrusy, and you can make it spicy if your tastes lean that way. While it is often used as a marinade, you can serve it as a dipping sauce as well. Eat the chicken breast by itself or serve as a core ingredient for other recipes and foods. The ingredients used to make mojo vary depending on the recipe, but this mojo sauce is a standard version: It includes fruit juices, vinegar, olive oil, garlic, cumin, pepper flakes, coriander, salt, and pepper. The red pepper flakes help add a little kick, but if you want to make it spicier, add a jalapeno or serrano. After you place your chicken in the slow cooker, pour the mojo sauce over, cover with a lid, and let it go to work for about 2 ½ hours. When the chicken is finished, use the juices in the slow cooker to create a sauce. Strain your liquids into a saucepan, bring to a boil, and make a slurry from cold water and cornstarch. When the juices have reduced, add your slurry and boil, stirring constantly, until thickened. Editorial contributions by Keaton Larson Cook Mode (Keep screen awake) Ingredients 1x 2x 4x Oops! Something went wrong. Our team is working on it. Original recipe (1X) yields 4 servings ½ cup orange juice ¼ cup lime juice ¼ cup lemon juice 2 tablespoons white vinegar 2 tablespoons extra-virgin olive oil 5 cloves garlic, peeled and chopped 1 teaspoon ground cumin ½ teaspoon red pepper flakes ½ teaspoon ground coriander ½ teaspoon salt ¼ teaspoon ground black pepper 2 pounds boneless, skinless chicken breasts 2 teaspoons cornstarch 2 tablespoons water Directions Combine orange juice, lime juice, lemon juice, vinegar, olive oil, garlic, cumin, pepper flakes, coriander, salt, and pepper in a blender or food processor. Pulse several times until mixture is well blended and smooth. Place chicken breasts in the bottom of a slow cooker. Pour juice mixture over all, cover, and cook on High setting until no longer pink in the center and juices run clear, about 2 ½ hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Shred cooked chicken with two forks, adding a little liquid from the slow cooker, if desired. If serving as a main dish, remove chicken to a plate, cover, and keep warm. Strain liquid into a 1-quart saucepan and bring to a boil over medium-high heat. Simmer until liquid is reduced to 1 cup, about 10 minutes. Combine cornstarch and water in a small bowl and stir until there are no lumps. Add cornstarch mixture to the saucepan, stirring continuously. Allow mixture to boil about 2 minutes, stirring continuously. Remove from heat when sauce is thickened. Adjust seasonings, if necessary. Cook’s Note I also like to serve the chicken breasts whole with these Cuban Black Beans and steamed white rice.
