Original recipe (1X) yields 8 servings 1 pound sweet potatoes, peeled and cut into chunks ¼ cup butter or margarine 1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk 2 large eggs 1 teaspoon grated orange zest 1 teaspoon vanilla extract 1 teaspoon ground cinnamon 1 teaspoon ground nutmeg ¼ teaspoon salt 1 (9 inch) pie shell, unbaked Directions Place sweet potatoes into a large pot and cover with salted water; bring to a boil. Reduce the heat to medium-low and simmer until tender, about 20 minutes. While the potatoes are cooking, preheat the oven to 350 degrees F (175 degrees C). Drain potatoes and place into a large mixing bowl. Add butter and beat with an electric mixer until smooth.
