Original recipe (1X) yields 6 servings 1 (1.5 pound) package small yellow-fleshed potatoes 3 pounds skin-on, boneless chicken thighs 3 small apples, peeled and diced ½ medium sweet onion, diced 1 cup chicken broth ½ cup honey ⅓ cup applesauce 1 clove garlic, minced 1 teaspoon salt ½ teaspoon ground cinnamon ½ teaspoon ground cumin ¼ teaspoon ground black pepper Directions Chop any large potatoes in half. Place potatoes in the bottom of a slow cooker. Add chicken thighs on top of potatoes, and spread apples and onion over top. Line a baking sheet with aluminum foil. Remove chicken thighs from the slow cooker and place, skin-side up, on the prepared baking sheet.
