Continue to boil until potatoes are easily pierced with a knife, 15 to 20 minutes. Meanwhile, preheat the oven to 350 degrees F (175 degrees C). Spray an 8-inch square baking pan with cooking spray. Mix cinnamon, salt, pepper, nutmeg, and allspice together in a small bowl. Mix maple syrup and melted butter together in another small bowl. Drain potatoes and transfer to a bowl. Mash thoroughly. Add spice mix and stir until well blended. Transfer potatoes to the prepared baking pan. Drizzle maple syrup mixture over top. Bake in the preheated oven until heated through, 5 to 10 minutes. Cook’s Note As a shortcut, you can substitute frozen, cooked sweet potatoes for uncooked. You can also leave the sweet potatoes cubed, toss them with the spice mixture, then drizzle with the butter and maple syrup. We've done it both ways, but our family prefers them mashed.
