Add corn and cook in boiling water for 10 minutes. Drain and cool under running water until cool enough to handle. Cut corn kernels off cobs into a large bowl. Add tomatoes, green onions, cilantro, olive oil, vinegar, salt, and pepper; mix well. Add feta cheese just before serving. Cook’s Note You can use Greek dressing instead of olive oil and vinegar.Crumbled feta works just as well; I just prefer to have larger cubed pieces.You can marinate salad (prior to adding feta) in the refrigerator until ready to serve.
