Black garlic has been around for many, many years. It's regular garlic that has been fermented. It's soft and savory yet very sweet. High in antioxidants and full of many health benefits, black garlic can be used in both sweet and savory dishes, and it's absolutely delicious on its own.

Ingredients

Original recipe (1X) yields 10 servings

  • 10 cloves solo garlic (single clove garlic)

Directions

  1. Place a rice cooker in your garage or on an outside porch if possible; the garlic will release a very strong odor as it cooks.

  2. Place garlic in the rice cooker. Cover and cook on the Keep Warm setting for 2 weeks, without opening the lid.

  3. After 2 weeks, check garlic. It should be soft, fermented, and black in color. If not, continue to cook on the same setting, checking weekly, 1 to 4 more weeks.

Recipe Tip

You can use regular garlic cloves if you can't find single clove garlic.
