Ingredients

Original recipe (1X) yields 18 servings

  • ½ cup unsalted butter, melted

  • 1 cup brown sugar

  • 2 eggs

  • 3 ripe bananas

  • 1 ½ cups all-purpose flour

  • 1 cup oat flour

  • 2 tablespoons unsweetened cocoa powder

  • 2 tablespoons instant espresso powder

  • 1 tablespoon ground cinnamon

  • 1 teaspoon salt

  • ½ teaspoon baking soda

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line 18 muffin cups with paper liners.

  2. Pour melted butter into the bowl of an electric mixer and add brown sugar, eggs, and bananas. Mix until combined. Mix in all-purpose flour, oat flour, cocoa, espresso, cinnamon, salt, and baking soda until combined.

  3. Spoon batter evenly into the prepared muffin cups.

  4. Bake in the preheated oven until tops spring back when lightly pressed, about 20 minutes.

Cook's Note:

If you don't have oat flour, you can simply place quick-cooking oats into the bowl of your food processor or blender and make your own.
