Original recipe (1X) yields 10 servings 1 orange, zested 7 ounces dark chocolate (65 to 70% cocao), chopped into small pieces 2 tablespoons strong brewed coffee, or more to taste 6 eggs, separated, room temperature 1 pinch salt Directions Grind orange zest using a mortar and pestle until it forms a smooth paste. Combine chocolate, coffee, and orange zest in the top of a double boiler over simmering water.
