Original recipe (1X) yields 36 servings 1 cup butter, softened 2 cups packed brown sugar 2 eggs 4 cups unbleached all-purpose flour 2 teaspoons baking powder 1 teaspoon salt 2 (8 ounce) cans crushed pineapple, drained 1 cup butterscotch chips Directions Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets or line with parchment paper. In a large bowl, cream together the butter and brown sugar until smooth. Beat in the eggs one at a time, mixing well after each.
