Original recipe (1X) yields 16 servings Cupcakes: 1 cup white sugar ½ cup butter, softened 2 eggs 1 teaspoon vanilla extract 1 teaspoon coconut extract 1 ½ cups all-purpose flour 1 ¾ teaspoons baking powder ½ cup milk ½ cup pineapple juice 3 tablespoons crushed pineapple, drained, or more to taste Frosting: ½ cup butter, softened ½ teaspoon vanilla extract 2 cups confectioners' sugar, or more as needed 1 tablespoon milk 1 tablespoon pineapple juice Directions Preheat the oven to 350 degrees F (175 degrees C). Grease or line 16 cupcake cups with paper liners. Cream sugar and butter for cupcakes together in a medium bowl. Beat in eggs, one at a time. Stir in vanilla extract and coconut extract. Add flour and baking soda and mix well. Stir in milk and pineapple juice until batter is smooth. Fold in crushed pineapple. Spoon batter evenly into the prepared pan.
