Easy Slow Cooker Spanish Rice

I'm constantly asked to make this tasty dish and why not? It is a hearty meal in itself, perfect for game day or when you don't want to spend all day in the kitchen. I will usually serve it with cheesy homemade garlic bread.

Ingredients

Original recipe (1X) yields 8 servings

  • 2 pounds ground beef

  • 1 (28 ounce) can whole peeled tomatoes

  • 2 (8 ounce) cans tomato sauce

  • 2 green bell peppers, chopped

  • 1 cup water

  • 2 yellow onions, chopped

  • 1 cup converted raw rice

  • 2 tablespoons Worcestershire sauce

  • 2 tablespoons chili powder

  • ½ teaspoon hot sauce, or to taste

  • 1 cup shredded Cheddar cheese, or to taste

Directions

  1. Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until lightly browned and crumbly, 5 to 7 minutes. Drain and discard fat.

  2. Transfer beef to a slow cooker. Add tomatoes, tomato sauce, green bell peppers, water, onions, rice, Worcestershire sauce, chili powder, and hot sauce. Cook on High until rice is tender, about 3 hours. Serve in bowls and top with Cheddar cheese.

Cook's Notes:

You can use beef chuck or sirloin instead of ground beef, if desired.

This can also be cooked on Low for 8 hours.
