Ingredients

Original recipe (1X) yields 4 servings

  • 1 (1 3/4) pound butternut squash, cut into 1/2-inch cubes

  • 1 medium apple, cubed

  • ½ cup dried cranberries

  • ¼ cup I Can't Believe It's Not Butter!® Spread, melted

  • 2 tablespoons firmly packed brown sugar

  • ¼ teaspoon ground cinnamon

  • ¼ teaspoon ground nutmeg

Directions

  1. Preheat the oven to 425 degrees F (218 degrees C).

  2. Combine squash, apple, cranberries, melted spread, brown sugar, cinnamon, and nutmeg in a 1 1/2-quart baking dish. Stir until well combined and cover the dish.

  3. Bake in the preheated oven for 30 minutes. Uncover and continue baking until squash is tender, about 15 more minutes.
