Ingredients

Original recipe (1X) yields 6 servings

  • 2 pounds fresh asparagus, trimmed

  • 1 tablespoon olive oil

  • ½ cup Swanson® Vegetable Broth

  • 3 ounces soft goat cheese, crumbled

  • 1 tablespoon lemon juice

  • 1 teaspoon grated lemon zest

Directions

  1. Set the oven to 425 degrees F. Spray a roasting pan with vegetable cooking spray.

  2. Stir the asparagus and oil in the pan. Season the asparagus as desired. Add the broth.

  3. Roast the asparagus for 20 minutes or until tender, stirring once during cooking. Top with the cheese, lemon juice and lemon zest.
