Ingredients

Original recipe (1X) yields 6 servings

Muffins:

  • 1 ¾  cups all-purpose flour

  • ¾ cup white sugar

  • 2 teaspoons baking powder

  • 1 teaspoon ground cinnamon

  • ½ teaspoon salt

  • 1 large egg

  • cup vegetable oil

  • cup milk

  • 2 cups peeled and chopped apples (about 2 apples)

Topping:

  • ½ cup white sugar

  • ½ cup all-purpose flour

  • 1⁄3 cup butter, cubed

  • 1 ½ teaspoons ground cinnamon

Directions

  1. Gather the ingredients. Preheat the oven to 425 degrees F (220 degrees C). Line 6 large (3½-inch) muffin cups with paper muffin liners.

  2. To make the muffins: Stir flour, sugar, baking powder, cinnamon, and salt together in a large bowl. Mix in egg, oil, and milk. Fold in chopped apples.

  3. Spoon ½ cup of batter into each muffin liner.

  4. To make the streusel topping: Place sugar, flour, butter, and cinnamon into a small bowl; mash mixture with a fork until mixture begins to cling together. Sprinkle topping evenly over unbaked muffins.

  5. Bake in the preheated oven for 5 minutes. Reduce oven temperature to 350 degrees F (175 degrees C) and bake until a toothpick inserted into the center of a muffin comes out clean, 25 to 30 minutes. Let cool in pan briefly; remove muffins and cool on a wire rack.

This recipe was tested in our test kitchen and the amount of flour in the muffin mixture was increased to 1 ¾ cups. The original recipe called for 1 ½ cups. The baking temperate was increased to 425 degrees F for the first 5 minutes for better results.
