Ingredients

Original recipe (1X) yields 4 servings

  • ¼ cup olive oil

  • 1 red onion, chopped

  • 1 head cauliflower, cut into florets

  • 1 cup cherry tomatoes, halved, or more to taste

  • 2 tablespoons raisins

  • 1 teaspoon white sugar

  • 1 clove garlic, minced

  • 1 teaspoon dried parsley

  • ¼ teaspoon red pepper flakes

  • 1 tablespoon fresh lemon juice, or to taste (Optional)

Directions

  1. Heat olive oil in a large skillet over medium heat; cook and stir onion until tender, 5 to 10 minutes. Add cauliflower, cherry tomatoes, raisins, and white sugar to onion; cover skillet and cook, stirring occasionally, until cauliflower is tender, 4 to 5 minutes.

  2. Mix garlic, parsley, and red pepper flakes into cauliflower mixture; increase heat to high and saute until cauliflower is browned, 1 to 2 minutes. Drizzle lemon juice over cauliflower.
