Ingredients

Original recipe (1X) yields 8 servings

  • 2 (14 ounce) cans hearts of palm, drained and sliced into 1/2-inch rounds

  • 1 mango - peeled, seeded, and diced

  • 1 avocado, diced

  • ¾ cup watercress

  • onion, sliced

  • 1 tablespoon chopped cilantro

  • ¼ cup rice wine vinegar

  • 1 teaspoon white sugar

  • ¼ teaspoon ground black pepper

  • ¼ teaspoon salt

Directions

  1. Combine hearts of palm, mango, avocado, watercress, onion, and cilantro together in a bowl.

  2. Whisk vinegar, sugar, black pepper, and salt together in a bowl; pour over salad and toss to coat.

Cook's Note:

For variety, substitute mandarin oranges for mango or add jalapeno for increased spice.
