Original recipe (1X) yields 6 servings 2 ½ pounds yams 2 tablespoons butter 2 cups brown sugar 1 cup orange juice 1 teaspoon ground nutmeg 3 cups marshmallows Directions Preheat the oven to 400 degrees F (200 degrees C). Roast whole yams in the preheated oven until heated through but not quite tender, 35 to 40 minutes. Allow to cool. Reduce the oven heat to 350 degrees F (175 degrees C).
