Ingredients

Original recipe (1X) yields 4 servings

  • 4 thick slices bread, toasted

  • 1 tablespoon olive oil, divided

  • 1 ½ cups leftover creamed spinach, divided

  • 1 tablespoon freshly shredded Parmigiano-Reggiano cheese, divided

Directions

  1. Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil.

  2. Brush lighter sides of toast with olive oil; place onto the prepared baking sheet, oiled-sides-down.

  3. Spoon creamed spinach on toast slices, spreading all the way to the edges; top with a sprinkle of Parmigiano-Reggiano cheese.

  4. Bake in the preheated oven for 10 minutes. Turn on the broiler and broil until cheese is lightly browned, about 2 minutes more.
