I love this recipe because it can be prepared ahead and frozen. Thaw time is minimal. A great dish for game day or surprise company. I really love this dish because it is so simple to make, yet it tastes fabulous. It freezes well, so when you have time on your hands, you can make a couple up and freeze them. Then when you are harried or just plain tired, just pop it in the oven and have a wonderful meal. It is also well within anyone's budget. Some like it better the second time around. Any kind of salad goes well with it.

Ingredients

Original recipe (1X) yields 8 servings

  • 1 (22 ounce) package corn chips (such as Fritos®)

  • 1 (15 ounce) can sliced black olives, drained

  • 1 cup water

  • 2 (15 ounce) cans chili without beans (such as Hormel®)

  • 1 (32 ounce) bag shredded Cheddar cheese

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. Spread corn chips in a 9x13-inch baking dish. Sprinkle olives evenly over chips.

  3. Mix chili with water in a large bowl; pour mixture over olives and corn chips. Top chili with Cheddar cheese.

  4. Bake in the preheated oven until cheese is melted, about 20 minutes.
