Ingredients

Salad Dressing:

  • ¼ cup white sugar

  • ¼ cup red wine vinegar

  • 3 tablespoons olive oil

  • 1 tablespoon chopped fresh basil

  • salt and pepper to taste

Fennel Salad:

  • 1 (10 ounce) bag mixed salad greens

  • 1 medium orange, peeled and broken into sections

  • 1 small fennel bulb, thinly sliced

  • ½ medium red onion, thinly sliced

  • ½ cup slivered almonds

  • ½ cup dried cranberries

Directions

  1. To make the dressing: Whisk together sugar, vinegar, oil, basil, salt, and pepper in a small bowl until sugar dissolves.

  2. To make the salad: Toss salad greens, orange sections, fennel, onion, almonds, and cranberries together in a large bowl.

  3. Pour dressing over salad and toss to combine.
