Creole seasoning is made with black pepper, garlic powder, onion powder, cayenne, thyme, basil, and oregano. Sometimes, you might find bay leaves, rosemary, or parsley in it too. So, Creole seasoning has a light spicy kick, but it has more aromatics to balance it out than Cajun seasoning does.

Cajun Seasoning vs. Blackened Seasoning

Blackened seasoning can be described as a mixture between Cajun seasoning and Creole seasoning. It's quite spicy (from the cayenne or chili powder), but it also contains aromatic herbs (like oregano, thyme, and basil).

Blackened seasoning is also different from Cajun seasoning in the way it's used. The term "blackened" doesn't really have anything to do with the seasoning itself, but in the way the food is prepared.

The protein, like fish, shrimp, or chicken, is drenched in butter, then heavily coated in blackened seasoning and seared. The blackened seasoning will create a blackened crust on the outside of the food after a few minutes of cooking.
