This is my sorbet version of a favorite drink—piña colada! It's creamy, cool, pineapple and coconutty and a wonderful summer dessert. Enjoy!

Ingredients

Original recipe (1X) yields 8 servings

  • 1 ½ cups white sugar

  • 1 ½ cups water

  • 1 (20 ounce) can canned crushed pineapple, drained

  • 1 (13.5 ounce) can coconut milk

  • ¼ cup lime juice

Directions

  1. Bring sugar and water to a boil in a small saucepan over high heat; stir and boil until liquid becomes clear, about 1 minute. Set aside to cool.

  2. Add pineapple to a blender or food processor; blend until very smooth and frothy. Whisk syrup, pineapple purée, coconut milk, and lime juice together in a bowl; refrigerate until chilled, about 3 hours.

  3. Pour pineapple-coconut mixture into an ice cream maker and freeze according to the manufacturer's directions. Transfer to an airtight container and freeze until firm or desired consistency.
