A three-cheese sauce for pasta is yesterday's news! This extra cheesy four-cheese sauce is made with Parmesan, mozzarella, provolone, and Romano. It's great on gnocchi, fettuccini, or any type of pasta. Garlicky French bread would be a tasty accompaniment.

Ingredients

Original recipe (1X) yields 8 servings

  • 2 cups heavy whipping cream

  • ½ cup butter

  • ½ cup grated Parmesan cheese

  • ½ cup shredded mozzarella cheese

  • ½ cup shredded provolone cheese

  • ½ cup grated Romano cheese

Directions

  1. Combine cream and butter in a saucepan over medium heat; stir frequently until butter melts, and bring to a simmer. Gradually stir in Parmesan, mozzarella, provolone, and Romano. Reduce the heat to low and cook, stirring constantly, just until cheese melts. Serve immediately; sauce will thicken upon standing.
