Parmesan and Bacon Roasted Asparagus

We love roasted asparagus, and sometimes we like to add crispy bacon and shaved Parmesan cheese for a little extra flavor.

Ingredients

Original recipe (1X) yields 4 servings servings

  • 4 slices bacon

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • 1/2 teaspoon salt

  • 1/4 teaspoon paprika

  • 1/4 teaspoon freshly ground black pepper

  • 1 pound asparagus-washed, trimmed, and dried

  • 1/2 cup shaved Parmesan cheese

  • 1 tablespoon chopped fresh parsley (optional)

Directions

  1. Preheat the oven to 400 degrees F (200 degrees C). Line a 12x18-inch sheet pan with parchment paper.

  2. Cook bacon in a large non-stick skillet over medium heat, until crisp and brown, about 8 minutes. Remove bacon from the skillet, crumble, and set aside. Reserve 1 tablespoon bacon drippings in the skillet.

  3. Add olive oil, minced garlic, salt, paprika, and black pepper to the drippings in the skillet. Cook and stir just until garlic is fragrant, 30 seconds to 1 minute.

  4. Add asparagus to the skillet and stir quickly, coating with the seasoned oil. Remove skillet from the heat and spread asparagus in a single layer on the prepared sheet pan.

  5. Roast in the preheated oven until crisp-tender, 10 to 12 minutes (see note).

  6. Place asparagus on a serving platter and sprinkle with shaved Parmesan. Top with crumbled bacon. Garnish with fresh parsley.

Cook's Note:

The asparagus used in this recipe was about 1/2-inch in diameter, and it was cooked to a crisp-tender stage. If you prefer softer asparagus, increase the cooking time. Thinner asparagus may not need as much roasting time.
