During a recent "Mythical Kitchen" podcast, a listener called in to profess his love for his Grandma’s signature treat. The “cookie” he described sounded so delicious that we decided that we had to give it a try. What Are Grandma’s Graham Cracker Cookies? It started with a honey graham cracker, said the caller, that his Grandma would top with a swipe of peanut butter followed by a layer of chocolate frosting and a dollop of Jet Puff marshmallow creme. She’d top it with another graham cracker to make a sandwich and then freeze it for 30 minutes. When he arrived at her house after school, she’d pull one out of the freezer for him to enjoy. "It sounds like the opposite of the s'more and that sounds interesting!" said Mythical Kitchen co-host Nicole Enayati. And she has a point—instead of a warm and gooey s'more, this one is frozen and chilly. So how does it taste? How Do Grandma’s Graham Cracker Cookies Taste? They tasted as good as they looked and sounded. Grandma nailed it with this combination. The salty peanut butter was a perfect pairing for the sweet chocolate frosting and the fluffy marshmallow spread. And the graham cracker was the perfect vehicle for it all—sturdy enough to hold everything without getting soggy or falling apart. I absolutely will be making these again, but now that I’ve tried them, I’ve got ideas on how to make them even better. You can go the traditional route, but if you’re up for it, try some of my suggestions below! Tips for Making Grandma’s Graham Cracker Cookies Choose your frosting wisely: The original recipe uses store-bought chocolate frosting, but go with any flavor you want and use that for inspiration for the rest of the fillings. If you’ve got extra time, consider making your own frosting, which will make these treats taste even better. Swap nut butters: If you don’t do peanuts, consider another nut butter like almond or cashew. Nut allergy? No problem! Substitute with sunflower seed butter! Add some crunch: These are tasty just as they are, but I kept wishing for some crunch. Consider using crunchy peanut butter or adding some chopped nuts to your cookies to make them even more delicious and satisfying. Try more toppings: The classic here is good, but why not add some thinly sliced strawberries or chocolate chips? You could even add a layer of caramel sauce or a tiny scoop of ice cream. The sky is really the limit. How To Make Grandma's Graham Cracker Cookies Ingredients 8 honey graham crackers⅓ cup creamy peanut butter½ cup prepared chocolate buttercream frosting½ cup marshmallow creme Instructions Break graham crackers in half. Spread peanut butter and frosting evenly over the tops of half of the crackers. Top each with a dollop (about 1 tablespoon) of marshmallow creme. Cover each with one of the remaining graham cracker halves, then place on small baking sheet and freeze for 30 minutes. Remove from the freezer and enjoy. Serves: 8 Was this page helpful?
