Ingredients

Original recipe (1X) yields 4 servings

  • 2 1/2 cups diced potatoes

  • 3/4 cup shredded Cheddar cheese

  • 1/2 cup crumbled cooked bacon

  • 1/2 cup diced onion

  • 1/3 cup mayonnaise

  • 2 garlic cloves, pressed

  • salt and freshly ground black pepper to taste

  • 1/4 cup chopped green onions

Directions

  1. Preheat the oven to 325 degrees F (165 degrees C). Spray an 8x8-inch baking dish with nonstick cooking spray. Set aside.

  2. Combine potatoes, cheese, bacon, onion, mayonnaise, garlic, salt, and pepper in a large bowl. Transfer to the prepared dish. 

  3. Bake until potatoes are fork tender, about 1 1/2 hours. Top with green onions.
