Lemon Tahini Dressing

This rich and creamy lemon tahini dressing is easy to whisk up in minutes by blending olive oil, lemon juice, and garlic with a few spoonfuls of tahini paste. Delicious on salads or drizzled over roasted vegetables.

Ingredients

Original recipe (1X) yields 6 servings

  • ½ lemon, juiced

  • 3 tablespoons tahini paste

  • 2 tablespoons olive oil

  • 2 tablespoons water

  • 1 clove garlic, roughly chopped

  • ½ teaspoon salt

  • ¼ teaspoon freshly ground black pepper

Directions

  1. Combine lemon juice, tahini, olive oil, water, garlic, salt, and pepper in a mini food processor or blender; process until smooth.

Cook’s Note

If the dressing is too thick, add 1 teaspoon water and blend to thin. Continue adding water by the teaspoon until you reach your desired consistency.

You can also whisk the ingredients together in a bowl until well combined.

Store in a jar in the refrigerator.
