Inspired by the delicious dressing on the grilled chicken salad at TGI Fridays, I created my own version. Drizzle it over anything that needs a refreshing burst of flavor.

Ingredients

Original recipe (1X) yields 16 servings

  • 1 medium jalapeno pepper, seeded and coarsely chopped

  • 1 clove garlic

  • ¾ teaspoon minced fresh ginger root

  • cup honey

  • ¼ cup lime juice

  • ¼ cup packed cilantro leaves

  • 2 teaspoons balsamic vinegar

  • ½ teaspoon salt, or to taste

  • ½ cup extra-virgin olive oil

Directions

  1. Pulse jalapeño, garlic, and ginger in a food processor until finely chopped. Add honey, lime juice, cilantro, vinegar, and salt. Pulse 3 to 4 times to blend.

  2. Slowly pour oil into the processor with the motor running until dressing is smooth. Taste and season with salt if needed before serving.
