I’ll Say It: Chocolate Chip Cookies Are Way Better Without the Chocolate Chips

Ali Francis, editor at Bon Appetit, recently drove the internet into a frenzy after admitting that chocolate chipless cookies may just be better than classic chocolate chip cookies. While this article hurt a lot of feelings, it echoed a sentiment that I have been feeling for a really, really long time. Chocolate chip cookies taste way better made without the chocolate chips. 

Now, don’t freak out, I still enjoy a gooey warm chocolate chip straight out of the oven as much as the next person—but I’d be lying if I didn’t admit that the best part is the sugary bits of the cookie that have no chocolate chips in sight. Sometimes a chocolate chip cookie just feels like far too much with its different textures and inconsistency that some days I just prefer a no-frills cookie. 

I know what you may be thinking, well isn’t that just a sugar cookie? And while I’m not here to slander sugar cookies as well, sugar cookies and chocolate chipless chocolate chip cookies (say that three times fast) are entirely different. For starters, chocolate chip cookies are made with brown sugar instead of white sugar. Brown sugar is made by combining white sugar with molasses, giving it a darker hue and caramel-like flavor that when added to cookies, lends them a soft, chewy texture. Plus, the vanilla extract found in chocolate chip cookies gives it more of a complex flavor. So when you make chocolate chip cookies without the chips, it becomes much more than just a sugar cookie.

If you want to embrace the freedom that is a chocolate chipless chocolate chip cookie, then go ahead and follow any of your tried-and-true chocolate chip cookie recipes—like this Perfect Chocolate Chip Cookie recipe—and simply omit the chocolate chips. Oh, and even better: if your friends and family make fun of you for your chocolate chipless cookies, then you can save them all for yourself. 

I encourage anyone who’s ever picked out the chocolate to embrace the freedom that is simply making them without the chips.
