Garden Salad with Creamy Dressing

Growing up, my elderly neighbor used to spend the summers tending to his garden and would make the most delicious garden salad for us. The creamy dressing is so simple - it really lets the fresh veggies be the star of the show, and no one believes it's just cream, salt and pepper! If you can't find garden-fresh veggies, use store bought; however, the green leaf lettuce is essential for the flavor of the salad.

Ingredients

Original recipe (1X) yields 8 servings

  • 2/3 cup heavy cream

  • salt and pepper to taste

  • 1 head green leaf lettuce, chopped

  • 1/2 English cucumber, thinly sliced

  • 6 radishes, thinly sliced

  • 4 green onions, sliced

Directions

  1. In a small bowl, whisk together heavy cream, salt and pepper. Add enough salt so that the dressing is slightly salty, as the saltiness will dilute once mixed into the salad. Set aside.

  2. Place lettuce, cucumber, radishes, and green onions in a large bowl. Drizzle with dressing and toss to coat. Let sit for 5 minutes, and toss again before serving.
