Prepping takes a little time but [is] so worth it." – John Wallace View Recipe 19 of 20 Make-Ahead Turkey Gravy with Porcini Mushrooms and Marsala Wine Chef John Make this Marsala and porcini mushroom gravy before the Thanksgiving crush even begins! "With this make-ahead gravy on the menu, there's no scrambling to make gravy when the turkey comes out of the oven," says Chef John. He'll show you how to make turkey stock in advance. Once you have the stock prepared, you're well on your way! Simply make a roux with butter, sautéed porcini mushrooms, and flour, and add the stock, letting it simmer on the stove.
