I've tried many different variations now, too; dark brown sugar adds a richer taste. I've subbed almond flour and used white/whole wheat with equal success. This is my fave, decadent ('cause of the sugar), oatmeal cookie - hands down (or in the air like I just don't care!). I did brush a light coating of jam for color effect. Used Pink Lady apples and a mandolin for cutting. Covered with parchment and aluminum foil for 28 minutes and uncovered last 2 minutes. I made one directly in the muffin pan and one in an aluminum muffin paper placed in the muffin pan. Both cooked equally well and both were easy to remove (I sprayed with Pam and floured each.) These seem much healthier than apple pie. I omitted the brown sugar - but will add next time. Mine weren't gooey. Thanks for the recipe! Used Italian style breadcrumbs hoping to impart more flavor, and I always add about 1/2 cup milk for moisture content. Cooking technique differed, too. I baked them all at 400 for 30 minutes in a chicken stock bath. Ok, so this is really becoming my own personal meatball recipe. But still, I used ketchup for the first time ever in a meatball!
