Costco Just Brought Back Its Cutest Holiday Dessert, Hands Down

You can thank Queen Elizabeth I for its cuteness.

Historians believe the Greeks introduced ginger to the world about 4,500 years ago. The spice’s popularity in baking came centuries later in the Middle Ages in Europe. Historians credit Queen Elizabeth I with shaping cookies made with ginger into animals and people, essentially inventing what became known as gingerbread men. 

Costco has taken those gingerbread men—now associated with the holidays—miniaturized them, and put them on top of gingerbread mini cakes, a treat that’s been over 4,000 years in the making. 

Costco’s Mini Gingerbread Cakes with Vanilla Icing

Like most of Costco’s mini cakes this year—the Lemon Mini Cakes, the Caramel Apple Mini Cakes, and others—the mini gingerbread cakes come in a six-pack for $8.99. The total weight of the small cakes is about 3 pounds, making them $1.50 for a half pound of cake, icing, and a small chocolate gingerbread man. 

The mini cakes always seem like a great value, but if they don’t satisfy your taste buds, the value is lost. Fortunately, these mini cakes, which are bigger than a cupcake but smaller than a full-size cake, are satisfying many Costco customers.

Laura Lamb of Instagram’s Costcohotfinds posted a video showing them in Costco’s bakery department. When Laura brought the cakes home, she cut one in half to reveal the spiced gingerbread cake inside. She described them as “gingerbread cake with vanilla whipped buttercream icing.” She said they have the “perfect mild amount of spice” while noting they're “sweet and delicious.”

The small gingerbread man cookie on top is made of edible chocolate gingerbread, making these cakes a perfect addition to a holiday dessert tray. Laura described them as “so darn cute!!” 

Costco Shoppers Love the Mini Gingerbread Cakes

While there were a few naysayers in the Instagram comments (everyone has different tastes), many commenters had great things to say about these holiday treats.

One commenter described them as having a “small gingerbread crisp on the edges” and said, “The vanilla icing was way better than the typical cream cheese icing you see on their cupcakes.” Another raved, “They taste great and the chocolate gingerbread boy was really good.”

“Tried them… wife and I love them! Definitely getting more!” said one Costco shopper, and another sent out a “xmas eve request” to someone else they tagged on Instagram. 

Add these to your list of holiday goodies to look for next time you’re at Costco, along with the peppermint bark, cashew almond toffee popcorn, and the warehouse store’s beloved pecan pie.
