It definitely packs a punch and is plenty spicy. It isn't the prettiest of dishes but it taste great. As written the cheese gets more of a golden brown crust instead of the melty cheesy one might expect. I recommend waiting until the last 15 minutes of bake time to add the cheese. Helpful (0) Easy Smashed Brussels Sprouts 11/17/2024 Made as written and not a fan. Boiling them made it impossible to soak up excess moisture resulting in soggy outcome. They were also hard to smash. I didn't have the manpower to do it and had to call on the hubby for help. Flavor was ok but if you are wanting crispy crunchy sprouts, this isn't the way to go. Also when it comes to parm, everyone thinks of grated as the stuff in the can. That stuff does not melt. You'll want to use fresh finely SHREDDED cheese for this to get a melt. I will go back to slicing sprouts in half lengthwise, tossing in oil/seasoning, and roasting. Easier and better outcome. Sorry. Helpful (0) Pepperoni Pizza Casserole 11/11/2024 I gotta say, it doesn't get much easier than this! I do however recommend swapping step 2 and 3 around. That way your pasta is done first (no washing the pan) and draining while your beef cooks. I also recommend using mini pepperoni so no chopping is required. It looks better in the finished dish as well. Can't help but wonder if Italian sausage might be better than beef in this? Not sure but I will sub it next time. Overall good casserole and simple. Helpful (0) Fall Minestrone Soup 10/16/2024 Made as written and substituted kale for chard as the recipe submitter noted. This was good, colorful, and very easy on the eyes. Where it fell short was seasoning. Rosemary alone didn't cut it. I ended up adding Italian seasoning, salt, and pepper. I'll add another can of beans next time as well. I did take a shortcut and used bagged coleslaw mix which included carrots which added color. Win/win! I highly recommend this recipe.
