Also added a little lean ground beef, browned first in oil w/onions, chopped cremini mushrooms & seasonings, added some homemade beef broth for extra flavor. Served w/a tsp of sour cream & some homemade corn tortillas...Great recipe & love the versatility. Really hit the spot on a cold snowy day! Thanks for sharing this! So simple, I used a 2 lb bag of baby carrots for this recipe and they were awesome!! Think we'll have these more often!! Helpful (3) Baked Chicken 10/03/2012 Main part of nephew's birthday dinner...rather than using cornflakes, I followed someone else's recommendation to coat with panko and flour; I also used sour cream and egg whisked together for flavoring & moistness...dredged breast halves in flour, then sour cream/egg mixture & let excess drip away, then coated in panko w/flour & seasoning of Mrs. Dash, Garlic Powder and black pepper...baked in oil-glazed pan and everyone loved it...had ten people, of which 4 were children...needless to say, there were leftovers as I cooked 14 breast halves...what WAS I thinking? lol, leftovers!! Only complaint was the coating didn't stickk to the meat enough, think maybe baked a little hotter than necessary...but it tasted great!! Helpful (6) J.P.'s Big Daddy Biscuits 09/09/2012 Tasty, flaky, everything a biscuit should be...Patted to 1" and cut w/ 3" cutter, got beautifully high results! Recipe said it made 6 grand size, so I doubled it...lol, got 20 super size biscuits! Those 'grand size' must have been huge to get only 6!! Will put some away & hope they reheat well for chicken soup tomorrow...Good as an egg muffin, w/butter only, and w/apricot jam...great recipe, has become my only recipe now! Thanks! Baked in time given, but I got in a hurry & didn't let them cool long enough before cutting...they didn't look nice but they tasted good...really rich, though, they should last a little bit! I did sub 3/4 C. panko bread crumbs for the crumbs/bread cubes...for seasoning, used Everglades Fish & Chicken seasoning but omitted the salt/pepper...fried in butter, too...A funny thing, I put the lettuce & tomatoes on plate & drizzled with a drizzle of Pomegranate Vinaigrette, some got on the tuna and it really was good! Marinated overnight as per recipe, the flavorings were subtle but tasty...hubby said "Mmmm!" Grilling over indirect heat was a challenge, as the grill is round & not real big, so some got real dark quickly...so put them in a foil pan & finished the cooking...will definitely make again!
