Today Needs improvement I made this recipe as written, cooking over medium heat until "it bubbled and then for 10 more minutes. I wasn't sure what to do with the lettuce so assumed to put it on the side. As written, this is very tomato-y and has the tinned tomato taste. It tastes nothing like any mexican rice, tex mex or traditional, that i've ever had. To salvage the meal for my family I added ground turkey, placed in a 9x13 dish and topped with cheese and baked. After baking with my small tweaks the dish turned out pretty good and my family liked it. I can understand the differences in the reviews from those that made it as written and those that changed the cooking instructions. As written, the recipe needs improvement. The chili powder and cumin was a nice addition to the chicken soup, but I couldn't get past the saltiness. My family wouldn't even try it. I also doubled the recipe. I ended up with an uneven ratio of sauce to pasta as written. After taking my pic I had my daughter go to the store and buy another bag of frozen tortellini (19oz) and it was the perfect ratio. Flavor-wise this recipe is heavily dependent on the sauce you use and could use some tweaks to up the flavor. Finally, the cheese doesn't need doubling when the recipe is doubled and we would skip the cheddar in the future for something like parmesan. My family rated this a 3.5-4.5. Helpful (0) Creamy Pumpkin Pasta Bake 11/05/2024 I made this as written using gluten free rotini. I did need to cook my sauce longer than suggested to get a good thickened sauce. Flavorwise, there was no real flavor of pumpkin and my family liked the pasta. A tweak I would make in the future would be to melt the parm into the sauce. I think that would make a creamier and better sauce. Helpful (0) Gluten-Free Vegan Banana Bread Muffins 11/02/2024 During Cross Country season I always have leftover bananas around after meets and what better thing to do with them is make muffins. I made 2 batches of this recipe, as written, using Cup4Cup gf flour. It made 12 muffins, not 8. I baked for the total of 40 minutes with checking with a toothpick at 20 minutes. The end result was a muffin that was very moist, and did not have a muffin texture. The flavor was okay and once cool, I had no issues with the wrappers sticking. As someone that is celiac, I would not make this recipe again. It just did not have the proper muffin texture and I couldn't get past it. My family ate these as well and rated them a 3.5... they like my recipe better. Helpful (0) Chicken Enchilada Pasta 10/29/2024 I made this as written using gluten free pasta for my family. Unfortunately, although they love Mexican food this was not a hit with them. They could not pinpoint one thing that would make it better. It could boil down to the enchilada sauce I used, but they were just not huge fans and gave this recipe a 3.5. I will note that this recipe makes a ton and we have plenty of leftovers that hopefully someone will eat.
