Original recipe (1X) yields 6 servings 2 tablespoons olive oil 1 ½ pounds chicken breast, cubed salt and ground black pepper to taste ½ cup chicken broth ½ cup prepared pesto ½ cup heavy cream 1 cup Parmesan cheese, divided 1 cup baby spinach ½ cup cherry tomatoes, halved 1 (16 ounce) package refrigerated cheese tortellini Directions Heat olive oil in a large skillet over medium-high heat. Add chicken to the skillet and season with salt and pepper. Sauté until chicken is cooked through and has browned, 5 to 10 minutes. Remove from skillet and transfer to a bowl; cover to keep warm.
