Easy to follow A keeper!
This recipe is exactly what I was looking for as I didn't have many ingredients to work with.I added some cumin seeds with the onion, carrots and garlic .I mixed the rice into the pan then added beef stock.Put lid on and simmered 15 mins.Covered with a towel and the lid and rest for 10 mins .Came out very great thank you.

Made only 2 changes: used an entire thing of mushrooms and 3 green onions. Kept everything else the same, always a favorite around here.

I will say you do not need to let the Everclear sit with the lemon peels for a month. A week is perfectly fine and the finished product still has plenty of lemon taste. After a week, I don't think you're going to get much more lemon taste out of the peels anyway. The ratios in the this recipe are spot on though. I will be trying this with Orange peels someday.

I didn't have any green onions when I decided make this, but I did have a leek. The leek made a great substitute.

A keeper!
Not measuring exactly, I used one carrot, one celery stalk and a small onion. I used heavy aluminum foil and baked for 30 min covered at 350 and 10 min uncovered and let rest for 5. I could eat this all by itself it’s that good and hearty. But, served with Pakistani Beef Curry from this site and the pairing was a match made from heaven. Baked rice is my new jam and will put this one on repeat! Thanks Arizona Desert Flower!
