I didn't have all the ingredients, so used a can of kidney and a can of black beans. I halved the spices (because the meat ended up being beef, so not as gamey). I used two jalapenos and some chipotles in adobe sauce (canned). I used about three. To me, it needed a little sweetness, so added some steveia (watching my calories), about three packets. THen a bit of salt. I actually did this in the instant pot and then litte it stay on warm for several hours. Turned out pretty good!! In the first place, I NEVER use canned soup...too many carbs. I added a jalapeño per another's suggestion and left out the red pepper flakes. Added Emeril's essence. Instead of the soup, I used diced organic tomatoes and a bit of tomato paste. The taste was surprising. I will definitely make this again. Lightened up on the cayenne pepper, since we we were catering to an unknown variety of palates. Will make again! I’m already eyeing a chili cook off at work.... I cannot imagine making this in a 9x13" pan or using 2 teaspons of b. power. For a birthday dessert I made this in a 9x9" and added butterscotch & chocolate chips, and chopped walnuts. I used 1 tsp each of baking powder and soda. 30 minutes was all it needed. For myself I made a healthy version of this: 1/4 cup sugar, replaced the butter with unsweetened applesauce, unsweetened vanilla almond milk, added 2 tbsp ground flaxseed, 1 scoop of vanilla whey protein, and used 1/2 tsp each of baking soda & powder. I cannot stay out of these!! 10 gold stars! Helpful (3) Lemon Poppy Seed Loaf 09/22/2009 4 stars with the recommendations for the yogurt and butter. I did swap out the butter for unsweetened applesauce. Even though I used lemon flavored yogurt, the lemon flavor was too subtle. I added 1 tsp of lemon extract. The DH gave it two thumbs up. Helpful (2) Flourless Chocolate Cake 07/10/2009 I've tasted better and other flourless cakes recipes I've tried turned out to be cakes. This was more gooey and I would possibly consider this like a torte? At 5,280ft here in Denver I believe the baking temp and/or time needs adjustment. The middle of my cake was just raw. Tastes better cold than warm. Helpful (5) Chewy Chocolate Chip Granola Bars 06/16/2009 Yum! Just as good, if not better, than store bought. Thank you soo much for this basic recipe. I used 1/4 cup sugar free maple syrup and 1/4 cup honey in place of the corn syrup. Other swaps: 1/4 cup brown sugar, broken graham crackers instead of cereal, part raisins part almonds for the marshmallows, ground flaxseed for wheat germ, and added a scoop of whey protein powder. I pressed the mix firmly into the pan before baking (27 minutes at 350) and I had no crumble issues. I cannot wait to try it with nutella and broken oreos! Helpful (4) Oatmeal Pancakes 04/12/2009 Maybe this is ok as is, but based off my healthy tweaks save yourself some time and find another recipe. These were dense and bland. The recipe made 7 4" pancakes. I used coaches toasted oats, wheat flour, applesauce in place of the oil, added chopped toasted pecans and 1 tsp of ground cinnamon. Even with using infused berry maple syrup, these were no good. A big downer at my Easter brunch! Helpful (2) French Crêpes 03/06/2009 Great basic crepe recipe that can be used in savory or sweet desserts. I had no issues with the batter, and I used 1/2 wheat and 1/2 white flour.
