The rice by itself? WOW. So very delicious! This dish definitely lives up to the "spicy" in its name but the flavor is otherwise kind of lacking. I'd definitely up the hoisin and soy sauce- and cut back on the rice, this makes A LOT of food. I don't think I'll follow the fried rice part of this recipe again, but the rice itself is definitely going into rotation as a side when we have asian food! As with everything, I used the recipe as a guide ssnd made lots of changes. 1- Didn't have bread, so we turned it into a pasta dish. Melted the brie in the pasta and topped it with the 'salsa.' Cooked the shrimp in the water as it was heating. Took them out, put the pasta in and prepared the rest while it was cooking. 2- Cut out mango open and it was brown, so we used half frozen mango and half frozen pineapple that we had. Works just as well with pineapple, in my opinion. I used 1 container of whipped cream cheese and one fat free, spicy ranch mix, chopped red, green and yellow peppers and green onion and Sweet Baby Rays Rasp. Chipotle BBQ sauce. Helpful (1) Pumpkin Coffee Cake 12/22/2010 Very good. I followed the recipe exactly except doubling the pumpkin as others have suggested and I lightened by using light butter and fat free sour cream. Came out moist, almost with a more pudding-cake texture than your normal coffee cake. Very, good! Helpful (1) Tres Leches (Milk Cake) 03/16/2010 The basic recipe is wonderful, but for those counting calories here are my modifications: I made the basic cake recipe as is written, with the slight change that I did separate the eggs as suggested. For the milk layer, I used 1 can of light coconut milk, 2% evaporated, and fat free sweetened condensed. I only poured about half to 3/4 of the milk on the cake, and that seemed to be enough. Moist, without being too rich. I let the cake set over night and then topped with 1 can of crushed pineapple, covered that with a layer of fat free whipped cream and then sprinkled with strawberries and mandarin oranges. Was a hit, and everyone appreciated the "lighter" version. Helpful (3) The Meatball that Fell Off the Table 02/04/2009 Awsome recipe.. the only thing I did different was to use half ground turkey and half lean ground beef, parmesan bread crumbs, a little bit of cayenne pepper and a ton more garlic. I baked instead of cooking them in a pan because I doubled the recipe and they wouldn't fit in the pan. I made a pan full of HUGE meatballs and my boyfriend literally ate almost the entire thing.. no joke. I served over mashed potatos with peas. Good comfort food. Helpful (0) Cinnamon Coffee Cake II 01/22/2009 Delicious! I followed some of the other reviewers suggestions and made 2 days before... only half made it to the brunch! It was wonderful. I did make some substitutions- I used 1/2 cup applesauce and 1/2 cup of apple butter in place of the oil, I used half splenda brown sugar and half regular and I used 2 boxes of french vanilla pudding because my boyfriend doesn't like butterscotch.
