We LOVE coconut in my family, so i had to try this recipe. However i found it had way too much liquid and made the cake almost mushy. I will try it again, but next time use less, probably half, the liquid and definitely put the crushed pineapple on top before the whipped topping as another baker suggested. It did have a great, rich taste and worth another try.

This is amazing! I made 2 changes. Did not use chicken granules and used chicken broth instead of water. I love this recipe!

We love it but the heat is HOT. Wow. Ok, so I like it but my daughter n law loves it. I will definitely make it again. I cooked the meat in an instant pot for better shredding adding all of he spices and green chili. After it was done I then added sour cream to bring the heat, along with cheese, eggs and milk. I do not eat pork so I substituted with more cheddar cheese and sprinkled Monterey cheese on top, then baked for 30 minutes. It was yummy.

Recipe is labor intensive. They were yummy right after cooking, but they were a giant mess. Directions called for ungreased cookie sheet, which left our to stick. If I was to do this again, I would build on the cookie sheet. That way you don’t have to move them multiple times.
