September 2024 Chicken turned out fabulously delicious. I did a quick brine in beer because I have never prepared a brine before, but maybe next time. I may have went a touch heavy on the fresh rosemary, but all in all it was delicious and I will make it again. I also added half a lemon in the cavity. Cook the chicken in oil until golden, remove to a plate and set aside. In the remaining oil with the crispy bits, saute your onion, garlic, and mushrooms until they release their juices. Add your broth, wine and herbs. Let this reduce. Add your cream, lemon juice, and capers. Heat, then add back your chicken. Simmer for 30 minutes or until it’s fully cooked. Great with rice. I discovered upon assembling the batter I had no shortening, so I used coconut oil. The bake time of 375 degrees for 25-30 is definitely an error. I baked this for 50-55 minutes at the same temperature for the best result. Also used fresh blueberries tossed in a tablespoon of flour. Helpful (0) Libby's Famous Pumpkin Pie 06/28/2021 My mom made this pie for years, I’ve used this same recipe for years. I get pumpkin pie cravings year round so I make this a lot. Pie always comes out perfect. I sometimes add nutmeg to give it another layer of flavor. I’ve even substituted sweet potatoes for pumpkin to see the results, it worked well too. Makes an awesome pie! Helpful (0) Old Fashioned Peach Cobbler 06/15/2021 I followed Twitcherys lead and made the filling per instructions. This is an excellent pie filling as well as for a cobbler. I even think the filling would be excellent as a sauce for ice cream, waffles, or pancakes. Will be making this again.
