Wow! Loved these. Interesting texture and very moist. Even the hubby ate them each day, and he hates chia. As recommended, I soaked the chia in orange juice while I prepped the rest. I used frozen wild blueberries - the tiny ones. I made the healthy version: all unsweetened applesauce (no oil), all splenda (no sugars), and half whole wheat flour. About 87 calories each this way.

Absolutely loved it, but hotter than heck. Definitely cut salt and cayenne in half. I used Brianna's Champagne Vinaigrette instead of italian dressing (didn't have any), and it worked really well.

I increased the shrimp (10 oz), peas (1/2 cup), and tofu (14 oz) to have a heartier soup. Flavor was outstanding and so low-calorie. I misread the recipe and use 1 1/2 inch piece of minced fresh ginger - and it was fantastic that way!

I doubled the recipe and it seemed more like 6 hearty servings. It wasn't a bisque-like thickness, but I did substitute fat-free milk for one-third of the half and half. Added in some green onions for color.

Great consistency and tasty leftovers. Yummy served as an open-faced sandwich on baguette. Skins only soft enough to eat on the bottom. Next time I will try cooking it in a casserole dish instead.
