Chipotle Butter

Chipotle butter is great on grilled steaks, grilled corn on the cob, toast with sliced avocado topped with a fried egg, scrambled eggs, and baked fish. The possibilities are endless. One chipotle pepper is spicy enough for us, but if you like things on the extra spicy side, add another pepper.

Ingredients

Original recipe (1X) yields 8 servings servings

  • 1/2 cup unsalted butter, softened

  • 1 chipotle pepper in adobo sauce, seeded and minced

  • 1 tablespoon minced fresh parsley

  • salt and freshly ground black pepper to taste

Directions

  1. Mix butter, chipotle pepper, and parsley until evenly combined in a large bowl. Season with salt and black pepper.

  2. Place mixture in the center of a piece of plastic wrap. Fold plastic wrap over the sides and form into a log. Twist ends to seal. Refrigerate for 2 hours before serving. Use within 3 days, or freeze for up to 2 months.
