Original recipe (1X) yields 8 servings

  • 1/3 cup yogurt (such as Icelandic Skyr®)

  • 1/3 cup light mayonnaise

  • 1 1/2 tablespoons cider vinegar

  • 1 tablespoon poppy seeds

  • 1 teaspoon dijon mustard

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 5 cups chopped or shredded cabbage

  • 1/3 cup julienned carrot

  • 2 cups unpeeled diced red apple

  • 1/2 cup golden raisins

  • fresh parsley, for garnish

Directions

  1. Whisk together yogurt, mayonnaise, vinegar, poppy seeds, mustard, salt, and pepper in a large bowl. Stir in cabbage, carrot, apple, and raisins. Garnish with fresh parsley.
